I found myself in a situation where I had some spicy sausage tortellini but nothing to put with it. I found sausages in my freezer and made my own sauce. Here’s how I did it:
You will need:
Sausages (non meat versions can skip this)
Liquid stock (from beef or veg stock cubes)
Tin tomato 2
Heaped teaspoon basil
Put the sausages in a single layer and pour in enough liquid beef stock to cover, this will cook the sausages so they’re nice and soft. Bring to boil, then lower heat to simmer and put the lid on the pot, keep this on for about 50 minutes.
(If a non meat version, imagine you’re covering sausages but just pour in that amount of liquid stock. Without the sausages it won’t need so much time on the heat.)
Add your two tins of chopped tomatoes to the now hot stock.
Add in the basil and paprika and stir in so the herbs and liquid are all well combined, this should make it taste less of tinned tomato and more like a recognisable sauce.
Now you’ll have quite a watery mix. To thicken it up, reduce it by bringing to a boil then leaving it for around 40 minutes with the lid off. (This bit is down to personal judgement so leave it a different amount of time if you think it needs it.)
With this you should have made a simple tomato sauce for pasta or maybe something else. I added my tortellini and it was nice and filling.
