Normally when I have fajitas it’s a planned meal where I buy a specially designed kit. I recently bought a spice rack and some peppers, then when I got home decided to defrost some chicken. I had wraps in already. Searching the internet gave me an idea of fajita spice but nothing fit my new spice rack.
You will need:
- Half teaspoon Cayenne Pepper
- 2 tablespoons Paprika
- 1 tablespoon Ground Cumin
- 1 tablespoon Garlic Salt/Powder
- 1 Heaped tablespoon Oregano
Combine the above ingredients in a small bowl by stirring them together. It should smell recognisable as fajitas.
I chopped up a red pepper and a yellow pepper. I diced half an onion. I chopped up six mini chicken breast pieces into cubes.
As I chopped everything, I placed them on a sheet of baking parchment on a baking tray. One all the chopped stuff was in a pile I added half my spice mix and stirred everything to get it coated, then poured on the rest of my spice mix and stirred again to fully coat. I also put a splash of oil on to help it cook.
I finished by cooking for half an hour in a preheated oven (roughly 200degrees).
I lined a different tray with tortillas. Once the spice covered mix was cooked, I scraped it onto my tortillas. Folding the tortillas over and cooking for another 10 minutes or so gave me a sort of fajita pie.
The spice mix is the important thing here. It can be used to flavour things and can be stored if there’s any spare.
